We’re about to tell you the story of Columbus and smoked paprika, one of the most carefully crafted spices in the world.

 

Popularly called “the Red Gold of Vera” by the best chefs around the world, it all started in 14xx when Columbus returned from the new world with gifts for King Ferdinand and Queen Isabella after they had financed his journey.

 

One of these gifts was paprika. And it was said that the royals actually found paprika to be a bit too spicy. But they did give it to monks to cultivate. And that was the beginning of a ceremony in food preparation.

 

You see, unlike sweet paprika (otherwise known as just paprika), smoked paprika has a much stronger, spicier and smoky flavor. It needs salt-free water and a special type of soil just to be able to grow.

 

On harvesting it is then smoked slowly (for over 15 days) to get it dehydrated to a particular moisture content (15% moisture). After which it is ground together slowly (the temperature of the paprika must not exceed 120°F, or else the paprika loses it’s smoky flavor, original taste, color and scent. And it’ll all be ruined and unusable)

 

All this just so you can get the smoky, spicy extraordinary flavor out of your BBQs and heavy traditional meals.

 

This special drying and smoking process also increases antioxidant levels in smoked paprika, which means you’re better protected from heart diseases, cancers, high cholesterol levels, etc. It even slows down aging.
